I’ve added some additional ingredients to give it a little flavor punch and to add just a touch of sweetness. If you want to keep things light and healthy, omit the sausage, bacon, and jalapeno peppers.

Ingredients:

  • ⅓ cup (75 mL) butter or margarine
  • ½ medium-sized yellow onion, finely chopped
  • ½ medium-sized green bell pepper, coarsely chopped
  • ½ pound (225 g) bulk beef sausage, cooked
  • 2 large cloves garlic, minced
  • 2 teaspoons (5 mL) fresh rosemary leaves, chopped
  • ¼ teaspoon (1 mL) dried oregano
  • 2 cups (500 mL) grated Parmesan cheese
  • 8 ounces (225 g) sharp provolone cheese, cubed
  • Salt and freshly ground black pepper

Directions:

  • Heat oven to 350F (180C). Spray a 9×13-inch (23cm x 33cm) pan with nonstick spray.
  • Melt the butter in a skillet. Add the onions and saute until soft and translucent, about 5 minutes. Stir in the garlic, rosemary, and ½ tsp. salt, cover, and cook for 1 minute longer. Drain off any excess fat and transfer to a large bowl. Let stand until cooled slightly.
  • Add the sausage, bell peppers, Parmesan cheese, provolone cheese, and seasonings to the onions; mix well. Crumble the ground beef into the bowl, adding a bit of salt and pepper if needed. Mix well and form into two loaves in the prepared dish.
  • Whisk together the eggs, ½ tsp. salt, and ¼ tsp. pepper in a separate bowl. Spread the bread crumbs over the top of the loaves. Scatter the chives and sunflower seeds over the top and drizzle with tomato juice. Brush the tops with oil. Bake for 50 minutes. Sprinkle the bell peppers with a little olive oil and sprinkle with salt and pepper.
  • Bake for an additional 30 minutes. Serve immediately with a side salad or steamed vegetables. Serves four.
